“I wanted to give the Gaslamp Quarter a new interpretation of it’s past. It was important for me to create a space noted for its sensuality of decor, while maintaining a welcoming and approachable restaurant. I had a vision for our food, decor and experience. We created our concept around ‘new American cuisine’ and found chef Jason Maitland to fit this profile.”
